Rosaline, a retired banker and grandmother, is the author of three cookbooks on Singaporean cuisine. She was born and raised in Singapore and her culinary repertoire includes local Singaporean dishes from her Peranakan-Teochew family as well as the Peranakan dishes she learned through her Malaysian mother-in-law. Gather at the table with Rosaline (and possibly her children if they are free) for a Singaporean and Peranakan meal. You might sample her beef rendang (beef cooked in a heady mixture of coconut milk and a paste of mixed ground spices), nyonya laksa (a spicy noodle soup with aromatic coconut milk), chicken rice (a typical Singaporean dish loved by young and old), and, to finish, ondeh ondeh (a traditional Malaysian dessert made of golden palm sugar wrapped in glutinous rice flour and rolled in freshly grated coconut). After your meal, you can tour Rosaline's lovely organic herb garden. If you book a cooking experience, join Rosaline in her kitchen for a cooking demonstration where you will learn to cook some of the best Singaporean and Peranakan dishes from Rosaline’s family recipes.

Singapore

One of Asia's great economic successes, Singapore has fused diverse cultures into one dynamic nation. Behind high-tech industries and high-rise buildings lives a society with an ingrained sense of conservative Confucian values. Beneath the westernized modernity beats a totally Asian heart. Strong beliefs center around extended families, filial piety, discipline, respect and Asian work ethics. Singapore’s name, meaning "Lion City," can be traced to the 13th century, and today there is the mythical Merlion, half-lion, half-fish, standing guard at the mouth of the Singapore River as the symbol of Singapore. A recent advertising campaign billed Singapore as "A Fine City."
